Kyoryori (Kyoto Cuisine)
Kyoryori, or Kyoto cuisine, is considered to be the origin of Japanese cuisine. Kyoryori specializes in vegetable dishes which are prepared simply, using fresh ingredients to allow their natural flavours to shine.
Appeal of Kyoto Cuisine
Kyoryori originated in the Heian period and was at the center of food culture in the Edo period. The use of fresh ingredients in Kyoryori dishes reflects the changing of the seasons. The fertile land and fresh water of the region provide Kyoto with the delicious vegetables used in Kyoryori.
History of Kyoto Cuisine
Before the development on modern transportation, it was difficult to bring seafood into Kyoto. As a result, vegetable and tofu dishes became the regional specialties. Kyoto's 1000-year history as the nation's cultural and political capital allowed for development of a sophisticated cuisine influenced by the court nobles, buddhist priests, samurai and ordinary residents of Kyoto.

Shojin Ryori: Buddhist vegetarian dishes, containing only vegetables and tofu.
Kaiseki Ryori: Tea ceremony dishes.
Obanzai: Dishes prepared by ordinary residents of Kyoto.
